If you'll ask me, the perfect dessert must have the following three ingredients: chocolate, bananas and coconut. This is for me the ultimate combination. Here I tried to combine them to what I call 'the perfect trio muffins'. It's extremely easy to make and completely vegan.
Ingredients
- 1.5 cups whole wheat
- ½ cup (quick) oats
- 1.5 teaspoons of baking soda (or baking powder)
- ¼ cup shredded coconut
- 3 bananas
- ½ cup of any sweetener (sugar or agave syrup will work)
- 1 teaspoon vanilla extract
- 1 cup coconut milk
- ¼ cup coconut oil
- ~80 grams dark chocolate
Instructions
- Heat up the oven to 350 degrees Fahrenheit / 180 degrees Celsius.
- Mix all the dry ingredients well (the first four in the list) in a big bowl.
- Add the rest of the ingredients but the chocolate and mix well. Here I use my hands to make sure I mash the bananas well enough, but you can also use a food processor or a food mixer.
- Here you have two options: either melt the chocolate and add it to the rest of the ingredients, or you can just break it into small pieces (or even use chocolate chips it might be easier) and add it to the mixture.
- Fill up muffins baking cups to about ¾ of their height, and place in a try.
- Bake for about 22 minutes until a tooth pick that goes in comes out clean.
Notes
It’s better to let the muffins cool a bit before you eat them. Enjoy!
